Superhealthy Dessert: Recipe for Chocolatey Coconut Chia Pudding

Chia seeds are the teeny tiny seeds that birthed those chia pets from the 80’s. Aside from growing into cute little animal shaped plants, they have an impressive nutritional characteristics.
According to Dr. Andrew Weil, “In pre-Columbian times they were a main component of the Aztec and Mayan diets and were the basic survival ration of Aztec warriors.” Like hemp, chia offers omega fatty acids and protein, but they are especially generous in their offering of fiber. Fiber is great for the digestive tract and essential element of an awesome diet. Chia seeds have this fascinating quality of absorbing a large amount of water easily creating a gel like consistency that is great for specific culinary purposes such as smoothies and puddings. Cacao Coconut Chia Pudding
This recipe is fairly simple and has magical qualities to it! It is amazing how easy it is to make delicious desserts that are actually healthy – Yes, I said that right, straight up HEALTHY! In addition to the nourishment of chia seeds, you will also get the benefits of raw cacao and coconut. Raw cacao has a high content of antioxidants and is a great plant source of iron.
Coconut has a unique kind of fat that has many impressive beneficial properties including immune-boosting, helping to prevent heart disease, it promotes weight loss (in appropriate amounts), and it has anti-microbial properties that support digestion.
In this recipe I used Nutiva’s milled chia seeds. Milled seeds have a different texture than whole ones which makes them more easily digestible and the nutrients much more available. I love the texture of the milled chia seeds in this pudding!
you will need…
1/4 cup Nutiva’s Milled Chia Seeds
3 T Nutiva’s Coconut Manna
2 T Raw Cacao Powder
1 t coconut sugar (you can also use stevia if you don’t like eating sugar)
1 cup of filtered or spring water
a pinch of vanilla bean powder or a splash of pure vanilla extract
a pinch of sea salt
your favorite superfood toppings such as shredded coconut, goji berries, cacao nibs, hemp seeds
and then you…
-Mix everything in a blender and put into a bowl
-Let sit for 10 minutes to allow to chia to absorb the water
-Enjoy!
